Lunchtime. Zucchini omelet.

Here comes zucchini omelet that I had for a lunch earlier today.

It doesn’t require much of the ingredients, just good old plain zucchini and eggs, sprinkled with salt and pepper to taste; I used garlic salt. The key is not to overdo zucchini because then they tend to become mushy. I love recipes that don’t include too many ingredients that I don’t have all of them on hand anyway. I would much rather go for the minimalistic variation.

This doesn’t really fill you up which is good as I can stand to lose some weight. I am 5’6″ and weighed 152 lbs the last time I stepped on a scale at the doctor’s office. I think I’ve lost a few pounds and love it.
